I fall into the trap of not eating healthy when I am busy. I still prepare meals regularly, but they tend to be convenient food that is less healthy than my family deserves. So how can we balance our need to eat better and our crazy-busy schedule?
PLANNING AHEAD! I know, not a fun, easy solution like having all meals delivered directly to your door.
I try to plan out my meals on Sunday evening. I look at our schedule and decide which evenings we’ll be home to enjoy a meal together. I then either order my groceries from Amazon Fresh (I love them!) or head out to the store.
Here’s the keep to incorporating more fruits and vegetables into our meals with less work. Once a week, I’ll do a big veggie prep session. I’ll lay everything out on the counter: big cutting board, several storage containers and a big bowl for composting materials. I systematically wash, chop and distribute veggies into containers to load the fridge. Then throughout the week, I can easily grab containers and add them when cooking.
I use a similar method when buying meat in bulk. I divide the family sized meat portions into freezer bags. I also will take time to cut chicken and steak into small piece and pour some marinade into the baggies before freezing. It makes the meal preparation so quick!
